The Holiday Drink – A Recipe

We present a home-style version of a cocktail found on a new drinks list. Designed as a party-sized pre-mixed which is loaded with essence of the festive period, rendering it perfect for hosting a holiday party. Save the extra syrup to use in brunch beverages, sweets, or for additional servings of the drink.

The Bikini Cocktail

Makes enough for 10 guests

For the Clementine Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Cocktail (makes 850ml, enough for 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

To prepare the Citrus Syrup: Combine all the components in a saucepan, heat until it reaches a simmer, mixing to dissolve. Then, take off the burner allowing it to cool fully. Decant to a clean bottle, close it keeping it chilled, where it will keep for up to one month.

For the Batch Mix: Pour the specified spirits and syrup into a sizeable container, allow it to infuse for one hour, then filter it , ideally through a fine cloth, so it's perfectly clear.

To serve: Measure 85ml from the cocktail base into a stirring glass filled with ice, gently stirring carefully for a minute to chill. Filter into a chilled martini glass or similar, top with a few cranberries adding the final touch with a brief mist of mandarin oil over the drink.
